Montresor Soave Classico ‘Castello di Soave’

£10.95

An excellent example of good quality Soave, fresh and lightly fruity with delicate floral aromas of honeysuckle, elderflower and a hint of spice. Crisp and refreshing on the palate with good depth of lemony fruit, lively acidity and a dry, lightly nutty finish.

Very versatile wine but excellent with simple fish such as grilled plaice or on its own well chilled as an aperitif. Also particularly good with Rissotti – simple herb versions are probably best.

A fine and well-priced example of this undervalued Italian classic This long established Veronese family company, headed by Giorgio Montresor, is producing wines which increasingly rival the offerings of the region’s more fashionable names. The estate wines, from 100 ha of vineyards in Valpolicella and Garda, offer remarkable value for money, particularly the Capitel della Crosara vineyard near Negrar which produces fine, richly-flavoured Ripasso and a generous, classically-styled Amarone with great concentration and texture. Montresor Soave Classico is made from a blend of Garganega and Trebbiano di Soave grapes cultivated in selected vineyards around the Soave hillsides. The vines are trained in the traditional trellis system and they benefit from the local Grapes are picked by hand in September. The grapes are gently pressed in Bucher presses and fermentation in stainless steel vats at a controlled temperature of 16 degrees with a short maceration. Malolactic fermentation is actively prevented. The wine is matured in stainless steel vats for a few months, then fined with bentonite and given a light filtration before bottling.
