Masala Chai

Chai means “tea” throughout most of India. In the West however "chai" refers to what in India is called masala chai. "Masala" means spice mixture. In India, chai is made in fresh batches and drunk in almost every home. On every street there are open-air chai stalls where chai is served in small glasses or clay cups. It is a part of daily life – morning chai, afternoon chai and chai any time with friends or visitors. Most any gathering or transaction involves sitting down and sharing a small cup of chai. It is the product of friendship. During our own travels we came across Masala Chai and loved it. On our return home we tried to buy some and found that it was only available in a powder or tea bag form . (Which didn’t taste the same) so we decided that we should develop a Masla Chai ourselves. We worked hard to perfect the recipe, using a variety of spices and different flavours of honey and at last came up with a recipe that was close to the Masala Chai that we had tasted. After months of trials, our Masals Chai was ready for Sale.

How to make the perfect C&C Masala Chai

The best way: Take a heaped dessert spoon (15g) of C&C Masala Chai per 300ml serving and add to a sauce pan. Boil a small amount of fresh water in a kettle and add to pan just covering the Chai. Turn on the heat and bring to the boil, then simmer for 2 minutes to allow the tea to infuse. Add a little extra honey to your taste, now add a cup of soya milk, almond milk (my favourite) or just ordinary milk and heat up to 80 / 85 degrees C. Making sure not to burn the milk. When heated pour through a fine tea sieve into your cup and enjoy. The Short cut: Take a heaped dessert spoon (15g) of C&C Masala Chai per 300ml serving and add to a Cafetiere. Boil enough fresh water in a kettle to make your Chai and add to the pot . Leave to infuse for at least 5 minutes plunger and then pour into your cup, now add soya milk, almond milk or just ordinary milk or try it black. Sit back and enjoy.
