The nose is lifted, fragrant and inviting, cassis and blueberry are evident without being dominant. This allows the tomato vine, herb and leafy earthiness to play an equal part of what is a complex aroma.
The palate is savoury, spicy and elegant. It’s deep and dark with rhubarb adding to the fruit spectrum and sitting alongside a subtle violet nuance and savoury elements of dark chocolate and dried herbs. There is no explosion of fruit, but rather an elegant and gradual building of complexity with persistent mineral, chalky tannins providing authoritative, balanced structure.

Description

The wines appearance is noticeably deep and dark, suggesting a complex full-bodied oak matured wine. The aromas are very classic cabernet with notes of exotic dark plums, mulberry, blackcurrants, fragrant cassis and an underlying mix of dark chocolate, cherries, cured meats and spiced violets.Made from a blend of three different grape varieties, this wine has been aged in oak barrels which give it a rich, deep flavour of liquorice and vanilla. It is full bodied with flavours of blackcurrants and cherries. The fruit is crushed and transferred to open fermenters. The must receives no plunging or pumping over. Once the primary fermentation is two-thirds complete, traditional foot-treading takes place.The wine is transferred to barrel to complete primary and secondary fermentation in a mix new and older French and American barriques for 12 months. Food Recommendations:- Steaks, Barbecued meats, Pork Sausage.
