Situated on the hill between Pommard and Beaune, Clos des Mouches gained its name from the sites favourable exposition for keeping bees or ‘mouches’ as they are locally called. This gloriously fruity red offers smoky red berry characters on the nose; whilst the palate is spicy, with black cherries and a touch of earthiness. A relatively young domaine established in the Côte de Beaune but with mature vineyards in classic appellations of Beaune, Pommard, Monthélie and Meursault.. Awards 2009 Vintage: Sommelier Wine Awards 2013 – Gold 2009 Vintage: Decanter World Wine Awards 2011 – Bronze . Le Galets Roules Chateauneuf du Pape Châteauneuf-du-Pape for the modern wine drinker. Dangerously enjoyable! A great youthful mouthful of Châteauneuf – Provencal garrigue aromas lead to a palate of sweet cherry flavours – Châteauneuf-du-Pape for the modern wine drinker. This wine derives its name from the large rounded pebbles (galets roulés) associated with the famous vineyards of the area. The stones cover the clay and chalk soils and naturally keep the vine yields low. Grapes are carefully selected and udergo a traditional long cuvaison at high temperature and extended maceration on the skins in order to extract plenty of colour, fruit and tannins. Food Recommendations Perfect with traditional lamb or Lancashire Hot-Pot. Chateau Fleur de Lisse – St Emilion The style is rounded with a hint of jamminess and with full, but soft tannins. 8km west of St Emilion lies the commune of St Etienne where 9 hectares of three different vines are grown and vinified seperately, so as to preserve their true characteristics. The final result is a wine of real St Emilion character and a true wine of great distinction. Situated at the heart of the most prestigious wine area in the world, the commune of St-Etienne de Lisse lies 8 km West of St-Emilion. Nine hectares of vines are grown on three different terroirs which are vinified separately in order to preserve their distinct characteristics. The majority of these vines are Merlot, with approximately 30% being Cabernet Franc. They also grow a small quantity of Malbec. Vines are replanted regularly to ensure a continuous supply of old vines for the future. Food Recommendation: Best served between 16-18c with red meat dishes, game and soft cheeses. . Sancerre Les Boffants Charles Dupuy Classic Sancerre, with aromas of currants and grapefuit, a dry, elegant palate with a layer of minerality, and a neat, focused finish. From a small producer in the Loire this beautiful Sancerre 100% Sauvignon Blanc with 12.5% alcohol. It is a favourite at many restaurants thorughout the UK and that is not suprising. The palate is herbaceous, grassy Sauvignon fruit with all the flinty mineral style of the Loire. Food Recommendation: Brilliant with seafood and Oriental cuisine as well as with tomato dishes and goats’ cheese La Roche Domaine Manciat Poncet Pouilly Fuisse Up front, generous nose of tropical and ripe white fruits. The palate is suggestive of its lees contact in barrel, but only hints at this with bready flavours squeezed in around its pineapple fruit and mineral acidity Domaine Manciat-Poncet was created by the merger of two family-owned estates: the Manciats in Charnay-lès-Mâcon and the Poncet family in Vergisson, in the appellation of Pouilly-Fuissé. The vines are all aged between 40 and 60 years and the wines display lovely floral notes. The Mâcon Charnay and Pouilly-Fuissé la Roche are unoaked, whilst the Les Crays Pouilly-Fuissé is aged in classic Burgundian oak barrels. Food Recommendations Full and rich with a wonderful minerally acidity which makes the wine a great match with seafood particularly shell fish. Domaine de la Motte-Chablis prermier Cru Beauroy Stylish, rich, deftly-oaked Chablis. La Motte’s wine is quite rich and rounded with hints of grilled almonds, gentle toasty oak, buttery fruit then classic mineral tones and balancing acidity on the finish. Bernard Michaut’s winery is small but perfectly formed. Following a 1m euro investment 5 years ago the winery is now fulfilling their dreams of producing top-flight Chablis. The lime-rich soil of the area suits Chardonnay very welland naturally limits yields to an absolute maximum of 50 hectolitres per hectare as well as imparting distinctive mineral characters to the wines. The grapes are sourced only from this ‘Premier Cru’ site. The grapes are hand-harvested and pressed gently. 35% is fermented in small oak barrels as this fuller -bodied wine benefits from more oak influence. It spends several months ageing on the yeast lees to add extra complexity. Food Recommendations Delicious with white fish in a creamy sauce or seafood
