Dona Paula is a leading, modern winery at the forefront of exploring and investing in new, high quality wine regions in Argentina. First established in 1997, they own all of their vineyards covering 700 hectres. These vineyard sites are located in the best sub-regions within Mendoza including Ugarteche, Altamira, Gualtallary and Tupungato. They practice sustainable methods in the vineyards, maximising the true expression of terroir. Their continuous innovation in terms of vineyard management ensures top quality wines from one year to the next. The grapes for this wine were sourced from two of Dona Paula’s estate vineyards. Finca Alluvia in Gualtallary, a recently discovered premuim sub region of Tupungato in Uco Valley and Finca Los Indios, located in Altamira, Uco Valley. Careful and gentle desteming with partial berry crushing to provide fresh berry aromas. Cool pre-fermentation maceration for 2 weeks to extract primary aromas, flavors and intense color under non-alcoholic phase. First part of the fermentation takes place under wild yeast culture and is finished inoculating selected yeast. Fermented at 25ºC, keeping the freshness the wine is then racked to new, second and third use French barrels (33% of each one) where the wine is aged during 8 months before being bottled.
