Description

This Cabernet Sauvignon shows an intense red colour. Ripe, red fruit can be found along with the complexity provided by mint notes and cassis. In the mouth, it has great body with balance and concentration and a lingering finish. Dona Paula is a leading, modern winery at the forefront of exploring and investing in new, high quality wine regions in Argentina. First established in 1997, they own all of their vineyards covering 700 hectres. These vineyard sites are located in the best sub-regions within Mendoza including Ugarteche, Altamira, Gualtallary and Tupungato. They practice sustainable methods in the vineyards, maximising the true expression of terroir. Their continuous innovation in terms of vineyard management ensures top quality wines from one year to the next. 100% hand picked grapes are completely distemmed and then partially crushed. Must is cooled immediately after crushing. Carbon dioxide gas is dispersed over the must to prevent oxygen from being in touch with the juice. 48-hour cool prefermentation maceration is performed to extract primary flavors and color. Alcoholic fermentation takes place in temperature controlled tanks, for a period of 10 days and at 22°C with peaks of 28°C. Total maceration period is 15 days.
